Maybe it's a Bluepoint thing but Bluepoint working on Demon's Souls made sense because in addition to owning the game Sony did have a small hand in the game's development, not to mention they kind of created Dark Souls as a replacement for Demon's Souls so I think From was fine with not being involved with remaking that game. It does make me think that Sony is trying to catch From during a lull in their schedule to work on some Bloodborne stuff for them because there's no technical reason they couldn't just have done an upgrade.
